Mexican Rice



Mexican Rice are so simple to make and utterly delicious. Get this easy recipe and entertain your family and friends with a super taste. Make serving with some simple gravy so you can get real taste of rice.

Ingredients

  • Tomatoes 3 (peeled)
  • Onion 1 small (peeled)
  • Chicken stock 1 cups
  • Salt to taste
  • Cumin powder ½ tsp
  • Sunflower cooking oil 1/3 cup
  • Rice 1 cup
  • Green chili 2 (chopped)
  • Garlic 2 cloves (pressed)
  • Green coriander 1/3 cup (chopped)
  • Lemon juice 4 tsp

Cooking Directions

  1. Blend together tomato and onion until puree.
  2. Pour puree in sauce pan; add chicken stock, salt and cumin powder. Allow boiling on medium heat.
  3. Meanwhile heat oil in another pan. Then add rice and sauté until rice are golden about 8-10 minutes.
  4. Add green chili and continue to stir about 2 minutes then add garlic and cook 30 seconds.
  5. Pour tomato puree mixture in rice; cover and cook rice on slow heat until all liquid evaporates and rice is 80 % done. (Adjust salt)
  6. Add green coriander and lemon juice. Simmer rice on slow heat for 10 minutes.
  7. Gently toss and serve.
