Ingredients
- Tomatoes 3 (peeled)
- Onion 1 small (peeled)
- Chicken stock 1 cups
- Salt to taste
- Cumin powder ½ tsp
- Sunflower cooking oil 1/3 cup
- Rice 1 cup
- Green chili 2 (chopped)
- Garlic 2 cloves (pressed)
- Green coriander 1/3 cup (chopped)
- Lemon juice 4 tsp
Cooking Directions
- Blend together tomato and onion until puree.
- Pour puree in sauce pan; add chicken stock, salt and cumin powder. Allow boiling on medium heat.
- Meanwhile heat oil in another pan. Then add rice and sauté until rice are golden about 8-10 minutes.
- Add green chili and continue to stir about 2 minutes then add garlic and cook 30 seconds.
- Pour tomato puree mixture in rice; cover and cook rice on slow heat until all liquid evaporates and rice is 80 % done. (Adjust salt)
- Add green coriander and lemon juice. Simmer rice on slow heat for 10 minutes.
- Gently toss and serve.
